Breakfast Skillet
For the larger appetite, this skillet will fill in all the cracks. You’ll push away from the table a little bloated, and maybe a little sleepy. At least I always am afterward.
MFO 4: A little chopping, a little sauteing, a lot of good eating.
- Ingredients: 3 large eggs. Six sausage links-( if you have breakfast sausage, great. If not, some kielbasa, Polish sausage, even Italian sausage works great here) already cooked. 1/2 cup of onion, diced. 1/2 cup green pepper, diced. Six bacon strips, cooked, and diced. 1 cup of diced potato. 1 cup of shredded cheese (cheddar or whatever you have) 1 tbs. butter.
- Cooking Instructions: Melt butter in your skillet. Add vegetables, and saute them until tender. Add bacon and sausage. Stir until everything is nice and bubbly. I usually beat the eggs and mix them right into the meat and vegetables, but if you want the nice yolk to run free when you cut into the eggs, fry them up on the side. Cover with shredded cheese and then top with the eggs. Serve with some nice, freshly squeezed orange juice.
