Puerco del Gordo
Literally, “pork of the fat guy”. Hmm. I wonder why they named it after me?
M.F.O. 3 Easy and nutritious. Look at me, I’m the poster boy for healthy eating!
- Ingredients: 4 to 6 pork chops (bone in, bone out- doesn't matter). 1 can diced tomatoes. 4 to 6 Jalapenos, diced. 1 lg. can of enchilada sauce (Goya makes a nice one). Brown rice (as many servings as you make chops- look at the box or bag)
- Cooking Instructions: Brown those pork chops. Brown 'em good! Mix tomatoes and enchilada sauce. Pour over pork chops and simmer on "low" until tender. (Remember the cardinal rule of Bar- B- Que: Low and Slow!) Serve either next to, or on top of, the steamed rice.
