Orange Cinnamon French Toast
Oranges are good. Cinnamon is good. Put them together with my second favorite breakfast item, (omelets are first) and you’ve got yourself a good ol’ fashioned party in your mouth!
I learned this recipe from Uncle Jeff, who for some reason, first tried to make an early morning cocktail with the ingredients found here. Yes, he even included the bread in the blender, citing some need to save precious time and electricity in the morning. Right.
So, I removed the ample amounts of Vodka he had called for, and adapted this for home cooking. Enjoy!
M.F.O. 6 1/2 : If you don’t do this quite right, you’ll have a nasty burned on mess in the bottom of your pan/casserole. Fire fighters have no sense of humor at four o’ clock in the morning.
- Ingredients: 2 to four tbs. melted butter. 2 tbs. honey (I like Clover honey). 1/2 tsp. ground cinnamon. 3 eggs. 1/2 cup orange juice (pulp-free is better here). 1/8 tsp. salt (optional). 6 slices thick sliced bread (for more "cinnamony goodness", try to use cinnamon raisin bread). Additional honey (optional)
- Cooking Instructions: In a bowl combine butter, honey, and cinnamon. Pour into a greased 9x13 baking pan/casserole. Spread mixture to coat the bottom of the pan. In a shallow bowl, beat those eggs like they've never been beaten- go ahead get all that pent-up aggression out, it sure beats going to anger management classes, and combine with orange juice and salt (if desired). Dip bread into egg mixture, and place in the prepared pan. Bake at 400 for 15-20 minutes, or until golden brown. Invert* onto a serving platter, and serve with additional honey. (*Invert means: "to turn over")
- Helpful Hints:: Try to keep your eye on this, as the sugars in the ingredients have a habit of caramelizing in the bottom of the pan, which could lead to some very burnt tasting junk and stuff, you know, the kind you would feel bad about giving to your dog to eat! I learned from experience that if you forget to time this one, the smoky aroma of burning sugar fills the whole house, causing everyone to question, "Now, what the hell are you doing?" Tell them to go back to bed, you got this.
