Grandma’s Fritatta
I was blessed with having my Grandma live with us for most of my childhood and young adult life. Her story was like that of most immigrants: she came to America at a young age with very little money, but managed to learn English, raise a family, and educate herself. She was also instrumental in not only teaching me to cook, but also instilling in me a lifelong passion for food.
This is a fritatta recipe she showed me when I was young. Unfortunately, I have never quite been able to make it the same way she did. Most of the time, it seemed as though she threw together a bunch of stuff she found in the fridge, but it always seemed to turn out just right.
MFO:3 Egg shells lying on the floor, bits of veggies stuck to countertops, and assorted unknown scraps of something stuck in my hair! Super.
- Ingredients: 2 or 3 eggs, beaten like a rented mule. Finely diced onion, broccoli, tomato, and zucchini. Lunchmeat ham, chopped up real good. Enough butter to choke Paula Deen. And most importantly, the love that only a grandma can unconditionally give you. Or, if yours passed away like mine did- way too soon- you can omit this.
- Cooking Instructions: Fire up that cooktop. Add some butter. Saute' veggies and ham together in a nice butter bath. Pour eggs over the ham and veggies, and let set up for around four to five minutes. Remember, guys- cooktops vary, so the key is to watch the eggs solidify, or firm up. Flip the whole thing over once and let cook for a few more minutes.
