Weird Cracker Chicken
I tossed this one together while talking on the phone. I think the “crackering” is the thing that makes this so unique. (Of course it is…without it it’s just chicken, you dingus)

I tossed this one together while talking on the phone. I think the “crackering” is the thing that makes this so unique. (Of course it is…without it it’s just chicken, you dingus)

1 chicken breast
10 Triscuit brand crackers
2 Tbls butter
1 Tbls worchestershire sauce
1/2 tsp poultry seasoning
1 Tbls hot sauce
Mix up everything but the chicken in a bowl - Yes...crush the crackers up by hand until they are just little shards.
Melt the butter and mix it in well. Mix in all the ingredients and slather it on both sides of the chicken. (Be sure you wash the chicken. Nothing is more gross than a dirty chicken.)(At least that was what my aunt Beatrice used to tell me. (Come to think of it - she had trouble walking through the Men's section at department stores) Her voice was really low, too.)
Place the slathered chicken in a glass dish and put a tsp of olive oil on both sides of it in the dish bottom. Put it next to the chicken and roll the dish around so the oil surrounds the chicken.
Stuff it in a 325 degree pre-heated oven for 22 minutes. Or until fully cooked.
The Crackering breaks off while eating and it becomes like the stuffing side that I'm too lazy to make.
